Pan Seared fillet Steak with garlic butter 

1 Fillet Steak

Salt & freshly ground black pepper

1 tbsp olive oil (or butter for frying)

1 tbsp garlic butter



Method

1.Make the garlic butter:

Mash together the softened butter, minced garlic, parsley, and lemon juice. Chill in the fridge to firm up.

2. Prepare the steak:

Season the fillet steak generously with salt and pepper.

3. Cook the steak:

Heat a heavy pan over high heat. Add olive oil or a little butter.

Fry the steak for:

Rare:

2-3 min per side

Medium:

4 min per side

Well done:

5-6 min per side

Let rest for 3-5 min.

4.Serve:

Top the hot steak with a slice of garlic butter so it melts over the meat.


🌿Grilled Lemon Herb Chicken Breast

Ingredients


4 Chicken breasts

1/4 Cup of olive oil

2 Lemons ( juice & zest of 1 lemon, slices of the second for grilling.

3 Cloves of Garlic ( chopped).

1 Tbsp fresh rosemary

2 Tbsp fresh parsley

1 Tsp salt

1/2 Tsp black pepper


🍋 Method

1. Make the marinade:

In a bowl or resealable bag, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, pepper, and red pepper flakes if using.

2. Marinate the chicken:

Add chicken breasts and coat well. Seal and refrigerate for at least 30 minutes, ideally 2-4 hours for best flavour.

3. Preheat the grill:

Heat your grill (or grill pan) to medium-high heat. Lightly oil the grates.

4. Grill the chicken:

Remove chicken from marinade and let excess drip off. Grill for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C). Add lemon slices to the grill during the last few minutes for charred garnish.

Rest and serve:

Let chicken rest 5 minutes. Garnish with parsley and grilled lemon slices. Serve with veggies, salad, or rice.
